Instructions
- Turn heat under medium non-stick skillet to med-high. Add oil and onions.
- Cook onions until translucent, and while onions are cooking, mix eggs & egg whites together.
- Wilt spinach and add eggs and pepper. Add cheese when eggs approach desired consistency.
- Enjoy with fruit.
