The Brandenburg Breakfast

I never thought that anyone would actually care, but people have asked me what I eat for breakfast. So, here it is. I eat pretty much the same thing every morning because that makes life much simpler for me, and eggs seem to be the one thing that I don’t get sick of. I get my protein, my healthy fat, a serving of fruit, a serving of veggies, and it tastes good, and I get it all cooked in 10min. Please note that my breakfast is probably a little too big for most people.

Ingredients

4 whole, omega-3 rich, free range eggs (yes, I eat 4 whole eggs almost every day, BUT my cholesterol levels are great… it really is a myth that eating eggs will give you high cholesterol, if anything these eggs will improve heart health) 280 kcal
1 slice organic Munster cheese 100 kcal
4-6 cups (2-3 large handfuls) organic baby spinach 25 kcal
3 pieces turkey bacon 60 kcal
1 cup berries 80 kcal
2 tbsp ketchup 25 kcal

Instructions

  1. Turn heat to medium high under two pans (one for the eggs and one for the turkey bacon).
  2. Begin cooking the turkey bacon, then add the spinach to the egg pan.
  3. Wilt the spinach completely, and break 4 whole eggs into the pan and begin to scramble.
  4. Turn turkey bacon, and scramble eggs until desired consistency.
  5. Add cheese to eggs, melt it, and turn off heat to eggs and turkey bacon.
  6. Grab your fruit, ketchup and eat.
